Spring Roll Tagine
- 4 Golden Tiger Vegetable Spring Rolls #56841, cooked according to package directions
- 4 Chicken legs
- 1 Sweet potato, peeled and diced
- 1 Green bell pepper, seeds and stem removed, large dice
- ½ cup Diced onion
- 1 Chinese eggplant, diced
- 2 cups Yellow curry sauce
- ½ cup Water
- 2 Tbsp. Cooking oil
- In a heavy bottomed, deep skillet, heat oil over medium-high heat.
- Brown chicken legs, about 5 minutes, flipping throughout cooking.
- Add sweet potato, pepper, onion and eggplant, cooking for 5 more minutes.
- Add yellow curry sauce and water.
- Turn down to a simmer and cover with a lid. Cook about 40 minutes.
- Serve chicken and veggies topped with a Golden Tiger Vegetable Spring Roll.
