Spring Roll Tagine

Spring Roll Tagine
  1. 4 Golden Tiger Vegetable Spring Rolls #56841, cooked according to package directions
  2. 4 Chicken legs
  3. 1 Sweet potato, peeled and diced
  4. 1 Green bell pepper, seeds and stem removed, large dice
  5. ½ cup Diced onion
  6. 1 Chinese eggplant, diced
  7. 2 cups Yellow curry sauce
  8. ½ cup Water
  9. 2 Tbsp. Cooking oil
  1. In a heavy bottomed, deep skillet, heat oil over medium-high heat.
  2. Brown chicken legs, about 5 minutes, flipping throughout cooking.
  3. Add sweet potato, pepper, onion and eggplant, cooking for 5 more minutes.
  4. Add yellow curry sauce and water.
  5. Turn down to a simmer and cover with a lid. Cook about 40 minutes.
  6. Serve chicken and veggies topped with a Golden Tiger Vegetable Spring Roll.
